Crock Pot Minestrone Soup
1 onion, chopped
1 cup carrots, chopped
2 celery stalk, chopped
2 garlic cloves, minced
1 (28 oz) can diced tomatoes, do not drain
1 (15 oz) can white beans, drained, rinsed
1 (15 oz) can garbanzo beans, drained, rinsed
3 cups fat free chicken broth
1 - 1 1/2 teaspoon dried oregano
1 - 1 1/2 teaspoon dried basil
Kosher salt and freshly ground pepper
2 cups chopped fresh spinach (You can use defrosted frozen spinach, but the texture will be different)
Parmesan cheese - for serving
Rinse and drain beans. In a crock pot, combine all ingredients through salt and pepper. Cover and cook on low for 6 to 8 hours. Add fresh or frozen spinach for the last 30 minutes of cooking.
Serve with shredded parmesan cheese sprinkled on top.
